Each model is different. Some can do a scene in one take, others may talk for 30 seconds then stop and ask for direction. But on the whole, most of the models say what they think the viewer wants to hear, so unless there has been a specific scene or wording requested, what you hear the model saying is their words as they think them while the camera is rolling.
